Hirajin(平甚/ひらじん) is a soba restaurant in Gujohachiman(郡上八幡/ぐじょうはちまん), a town through which the clear stream water of the Yoshida River (吉田川/よしだがわ - Yoshida-gawa) flows. In front of the shop flows the spring water called Sogi-sui(宗祇水), which was selected as the first among the 100 Exquisite and Well-Conserved Waters in Japan by the Ministry of the Environment. Nihachi soba goes well with their original soup, a mixture of flavored soup, Gujo's local miso and mame miso(豆味噌/みそ). The walnut chicken seiro (せいろ-chilled soba noodles served on a bamboo tray) is also a delectable treat. You can eat it by adding raw eggs or walnut paste into the soup. They also serve a set menu of zarusoba (ざるそば - chilled soba noodles) and a small bowl of Hida beef (飛騨牛/ひだぎゅう) and rice. Enjoy it in a tatami (畳/たたみ-Japanese traditional mat) room while watching the Yoshida river.
