AOYAGI SOUHONKE (青柳総本家) was founded about 140 years ago, during the Meiji Period (明治時代/Meiji Jidai). Aoyagi Uirou (青柳ういろう), Japanese confectionery, is a famous local food in Nagoya. It has a particular rich rice flavor, subtle sweetness, and a chewy texture. Even with recent advancements in automation, uirou still requires a great deal of care and attention to make. While the conditions at harvest time for the rice used in making uirou can affect its taste, the conditions of the room where the uirou is made can also affect the end product.
