Founded in 1695, the Niki Brewery is one of the oldest breweries in Takayama. All sake sold here is Ginjo-class or better (premium sake made with only the best part of the rice).
The brand name of sake is "Tamanoi." It is named after the well which has one of the cleanest water in Takayama. "Tamanoi" means "a treasure-like well."
This brewery was the first store to start making "namashu" which needs refregirating because it is raw.
